Wholemeal Banana Muffins

What you'll need:
  • 300g Blue Jacket Wholewheat Flour 

  • 40g brown sugar

  • 60g finely chopped walnuts

  • 2 tsp cinnamon powder

  • 225g caster sugar

  • 4 tsp baking powder

  • ½ tsp sea salt

  • 360 ml milk (preferably fresh)

  • 230g unsalted butter (melted)

  • 2 eggs

  • 600g mashed bananas

Method:

Makes 12 muffins

  1. Line a 12-cup muffin pan or muffin cups
     

  2. Set the oven to 180°C
     

  3. In a bowl, mix the brown sugar, walnuts, and cinnamon and set aside
     

  4. In a large bowl, combine flour, caster sugar, baking powder and salt
     

  5. In another bowl, beat the milk, butter, eggs and bananas until blended. Add into the flour mixture and stir until just combined
     

  6. Divide the batter evenly among the muffin cups. Sprinkle the walnut mixture on top
     

  7. Bake the muffins for 20 to 25 minutes until firm to the touch and lightly golden on top
     

  8. Serve warm
